Chef Jose learned cooking from his grandma, who was famous for serving ‘Home cooked Spanish food, with love’ at their family restaurant ‘La Hacienda’. Her philosophy ‘Do it with Love’ is the mantra Chef Jose follows to this day, whether simply boiling an egg, or making a complicated ‘Fish Paella’. It was his Grandma who gave him his first seal of approval, a ‘Snow White Chef Jacket’ with ‘JOSE L.’ embroidered in Marina Blue, at the tender age of 12.

Chef Jose loves to call himself a ‘Natural Chef’. His finger licking delights have made it to the dining rooms of the Royal Family of Spain, The 1992 Olympic Games, Formula 1, FC Barcelona and the Spanish Football Association. When it comes to cooking, Chef Jose has the mindset of a true striker. Eye on the Ball, strike at the right time, with the right power and the deftness of a magician. Every dish at the retreat has been specially curated to give that special touch of love in every bite. Enjoy!

Coliseum Sports Bar

Bring your hat along with you to the Coliseum sports bar. In-house competitive events, such as horse racing, maze running, or conventional sports are telecast live, covered by sophisticated day/night cameras. Additionally, all popular international sports events are cast live on a multitude of indoor and outdoor screens, creating an electric atmosphere throughout the day, going deep into the night. With an innovative architectural design, the Coliseum allows you to ‘Watch the event’ or ‘Be the event’ with equal grace and poise. Non-commercial punting is encouraged. Inspired by ancient Roman & Greek Auditoriums, patrons enjoy uninterrupted views through the ‘step down’ platforms as horses gallop by, or men (and women) of mettle challenge each other, racing or testing their endurance capabilities through the dirt track. The Coliseum also has an outdoor screen and a dance floor, to make the evening enthralling and exciting. Platform seats allow for higher privacy and ‘me time, all of which contribute to a healthier lifestyle.

Boabdil’s Lair

Experience Medieval Spain and a restaurant cast in the name of one of her most famous and last Islamic rulers, Boabdil. Boabdil’s Lair represents a phase of time when Spain was perennially at war, with queen Isabella1 and her husband King Ferdinand II waging war on Sultan Boabdil’s army, until the final siege at Granada. Sit inside a modern-day version of Moorish-Andalusian tent down the annals of history, introspecting about life and its quirkish challenges at Boabdil’s Lair, as you enjoy timeless Spanish culinary delights cooked to perfection by our celebrity chefs. Earthen and copperware and oven used to cook and serve are well known to preserve food longer, and taste better. Copper and earth have healing power, as per the Copper Development Association, and the deep-rooted science of Ayurveda.
